Turkish Salty Fork Biscuits
(Catal)

Ingredients:

2 sticks butter on margarine (1
cup) at room temperature

1/3 cup corn oil
-
4 tablespoon yogurt
-
1 tablespoon
mahalep (grinded with mortar and pestle)

2-1/2 teaspoon baking powder
-
1 egg yolk
-
4-1/2 to 5 cup all purpose flour
-
1 egg white (to brush the
biscuits)
Directions:

In a large bowl mix together
butter, corn oil, egg and plain yogurt.

Sift together the baking powder
and flour top of it, Add powdered mahalep and knead to make a soft dough. Rest
for half an hour.

Take about tablespoonful pieces
and shape a long stick.

Make a wide S shape and pinch
together ends of it to make the traditional shape of fork biscuit.

Put them in a greased baking
sheet and brush with egg white mixed with little water. Sprinkle with black or
sesame seeds.

Bake in a preheated 400F (200C)
oven until golden brown.
note: With the same dough
you can also make ring shape kandil simids (It is traditional in Turkey to make
it in a special religions days. After you shape a small rings dip it in a egg
white mixed with little water and right after dip in a roasted sesame seeds and
bake it as in the recipe.
