Rice Pudding (Sutlac)

Ingredients:
 |
4 cups whole milk |
 |
1 cup sugar |
 |
2 tablespoon cornstarch |
 |
1/2 cup rice |
 |
1+ 1/2 cups water |
 |
little piece of mastic gum,
crushed with mortal and pestle with a little sugar (optional) |
 |
1 egg yolk |
Directions:

Wash and drain the rice. In a
medium pan put the rice with water. After boiled simmer until rice is very
tender and water is absorbed. (Add more water if necessary while cooking)

In a bigger pot add milk, sugar
and mastic gum if added and bring to boil.

When rice is cooked with a back
of a wooden spoon mash the rice until half of the rice is crushed. Add to a
simmering milk-sugar mixture and stir.

In a small bowl stir cornstarch
and egg yolk with a little water until smooth. Pour it in a milk and rice
mixture thinly with stirring. Cook about 2-3 minutes more until thickened.

Pour the rice to serving cups.
Let it cool and chill in the refrigerator. Before serving if you wish
sprinkle with little cinnamon.
