Rice Pudding (Sutlac)

Ingredients:

  • 4 cups whole milk

  • 1 cup sugar

  • 2 tablespoon cornstarch

  • 1/2 cup rice

  • 1+ 1/2 cups water

  • little piece of mastic gum, crushed with mortal and pestle with a little sugar (optional)

  • 1 egg yolk

Directions:

  1. Wash and drain the rice. In a medium pan put the rice with water. After boiled simmer until rice is very tender and water is absorbed. (Add more water if necessary while cooking)

  2. In a bigger pot add milk, sugar and mastic gum if added and bring to boil.

  3. When rice is cooked with a back of a wooden spoon mash the rice until half of the rice is crushed. Add to a simmering milk-sugar mixture and stir.

  4. In a small bowl stir cornstarch and egg yolk with a little water until smooth. Pour it in a milk and rice mixture thinly with stirring. Cook about 2-3 minutes more until thickened.

  5. Pour the rice to serving cups. Let it cool and chill in the refrigerator. Before serving if you wish   sprinkle with little cinnamon.
