Rolled Pastry with Feta
Cheese Filling (Kuru Poğaça)

Ingredients:

7 tablespoon (100gr.) butter on
margarine (at room temperature

1/3 cup corn oil
-
2/3 cp plain yogurt
-
2 egg (leave one egg yolk to
brush the tops)

2 teaspoon baking powder
-
1/2 teaspoon baking soda
-
2 teaspoon salt
-
4 to 4-1/2 cup all purpose flour
Stuffing:
-
1 cup feta cheese crumbled (or
replace some of it with other favorite cheeses)
-
1 egg
-
1-1/2 teaspoon salt, crushed red
paper flake
-
1/3 bunch chopped parsley
(optional)
Mix all together and set aside
Directions:

In a big bowl or in a heavy duty
mixer mix together butter, oil, eggs and plain yogurt.

Keep apart 1/2 cup of the flour.
Sift all the dry ingredients in a same bowl. Knead to make a soft dough.
Add more flour if needed. Rest for 10 minutes.

Cut the dough in a half. Make
round shapes and roll a disk with a rolling pin about 1/4 inch thick.

Cut the disk in 12 like a pizza.
Take a piece and roll again to make it thinner if needed.

Put some filling to a wide side
and roll it to have the shape as in the finished photo.

Arrange finished rolls to a
greased baking sheet. Brush top of them with egg yolk mixed with 1
teaspoon milk. Sprinkle with your favorite seeds. (poppy seed, sesame seed..)

Bake about 25-30 min. in 375F
(185C) oven until puffed and golden.
